Jammy Dodgers w/ Blueberry Lemon Basil Jam

Ingredients:

Shortbread

  • 2 cups butter, softened

  • 1 cup white sugar

  • 2 teaspoons vanilla extract

  • 4 cups all-purpose flour

Blueberry Lemon Basil Jam

  • 5 cups blueberries

  • 5 oz lemon juice

  • 2 cups granulated sugar

  • 2 tablespoons pectin

  • Handful of basil 

Instructions:

Shortbread

  1. Preheat oven to 350 degrees F (180 degrees C).

  2. Cream butter and sugar until fluffy. Stir in vanilla; add flour and mix well.

  3. Roll out dough, use cookie cutters to cut of the dough into circles.

  4. Take half of those circles and cut out a smaller hole in the middle for the jam to live in (cut-out-cookie). These eventually become little sandwiches so make sure there are an equal number of bottom cookies as there are cut-out-cookies.

  5. Place all cookies flat on baking tray. Bake for 10 - 12 minutes. Let cool before assembling.

Jam

  1. Boil everything but the basil and pectin for 15 min on low in a big pot. 

  2. Add pectin, boil for 5 more minutes. Stir constantly. 

  3. Add basil, take off of heat, and emulsify immediately 

  4. Can the jam (if you’d like), seal the lids and flip upside down for a few hours (so the lids seal).
    (Makes 4 pints)

Assemble

  1. Place a dollop of jam in the center of a bottom cookie.

  2. Spread Jam slightly before placing a cut-out-cookie on top.
